My amazing sister-in-law has been staying over at our house this summer.
Let me tell you… we’ve had quite a time watching all the Pirates of the Caribbean movies, eating tons of ice cream, and making delicious recipes.
One night we had a craving for Poke Bowls so we headed to Aldi and gathered the ingredients for this incredible dinner.
Salmon Bowls
The Base
We decided on. . .
Jasmine Rice
I personally enjoy jasmine rice more than white or brown rice.
Measure out your rice.
We made dinner for three adults and three kids so we made 3 cups of rice and had plenty leftover.
Cook your rice in chicken broth, not water!
Rice is a bland food. Let’s all admit it.
So whenever possible I cook my rice in chicken broth instead of water to give it more flavor.
The Protein
I’m on a huge salmon kick at this point in my life, so teriyaki salmon was the obvious choice for us.
Cook in a cast iron skillet.
I only own cast iron.
This is partially due to my fear of forever chemicals and partially because I haven’t gotten around to researching alternatives.
But also… cast iron works for just about everything.
Grill the salmon on the skin side first.
I personally don’t like the skin. And yes I recognize that part gets crispy and also contains a good portion of the omega 3s your body needs. . .
However, the scales freak me out.
And for these salmon bowls, it’s best to remove the skin anyway.
- Cook the salmon skin side down for a few minutes
- Flip the salmon so the skin is facing up
- Use a fork to now easily peel the skin off in one piece
- Pour teriyaki (or another sauce of your choice) on the salmon and cook through
The Toppings
Chop fruits and veggies of your choice to put over your rice and salmon.
We used mango, cucumber, carrots, sweet peppers, jalapenos, and avocado because those sounded yummy to us.
But you can honestly use just about anything for this recipe – just make sure it’s chopped small enough to mix into your bowl.
The Special Sauce
Top with a sauce of your choice.
We used this bang bang sauce that we found at Aldi.
Highly recommend!
The Garnishes
We garnished these lovely bowls with dried wasabi seaweed and sesame seeds.
